Ingredients

1 lb (450g) flank steak, sliced thinly against the grain

2 tablespoons vegetable oil, divided

3 cloves garlic, minced

1-inch piece fresh ginger, grated

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 cup broccoli florets

1 cup snap peas, trimmed

1 large carrot, julienned

3 green onions, chopped (white and green parts separated)

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Salt and black pepper to taste

Cooked jasmine rice, for serving

Toasted sesame seeds, for garnish

Instructions

Marinate the Beef: Place the sliced flank steak in a mixing bowl. Add 2 tablespoons of soy sauce and a pinch of black pepper, mixing well to coat the beef evenly. Let it marinate for 15-20 minutes while you prepare the other ingredients.

Prepare the Stir-Fry Sauce: In a small bowl, combine the remaining soy sauce, oyster sauce, sesame oil, and the cornstarch slurry. Mix thoroughly and set aside for later use.

Heat the Pan: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is shimmering, add the marinated beef in a single layer. Let it cook undisturbed for about 2-3 minutes until nicely browned. Flip the beef slices and cook for an additional 1-2 minutes until fully cooked but still tender. Remove the beef from the pan and set aside.

Cook the Vegetables: Using the same pan, add the remaining tablespoon of oil. Stir in the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Next, add the sliced red and yellow bell peppers, broccoli florets, snap peas, and julienned carrot. Stir-fry the vegetables for 5-7 minutes until they are crisp-tender and vibrant in color.

Combine Ingredients: Return the cooked beef to the pan with the vegetables. Pour in the prepared stir-fry sauce, tossing everything together. Allow the sauce to coat the beef and vegetables while it thickens, cooking for an additional 2-3 minutes to ensure even distribution of flavors.

Finish and Serve: Gently stir in the chopped green onions (reserve some green parts for garnish), and taste for seasoning. Adjust with salt and black pepper as needed. Serve the delicious stir-fry hot over a generous bed of jasmine rice, garnished with toasted sesame seeds and the reserved green onion tops.
