Ingredients

12 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and black pepper, to taste

2 cups marinara sauce

1 tablespoon olive oil

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

Cook the Pasta Shells: In a large pot, bring salted water to a rolling boil. Add the pasta shells and cook for about 8-10 minutes, or until they are al dente. After cooking, drain the shells and immediately rinse them with cold water to halt the cooking process. Set them aside on a clean surface to cool slightly.

Prepare the Filling: In a spacious mixing bowl, combine the chopped spinach, ricotta cheese, 3/4 cup of the shredded cheddar cheese, grated Parmesan cheese, the egg, minced garlic, Italian seasoning, and a dash of salt and pepper. Mix all the ingredients together thoroughly until they form a cohesive filling.

Stuff the Shells: Using a spoon or a piping bag, generously fill each pasta shell with the prepared spinach and cheese mixture. Arrange the stuffed shells in a lightly greased 9x13 inch baking dish, ensuring they are snug but not overcrowded.

Add Sauce: Evenly pour the marinara sauce over the stuffed shells, covering them generously. For an extra cheesy touch, sprinkle the remaining 1/4 cup of shredded cheddar on top.

Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then carefully remove the foil and continue baking for an additional 10-15 minutes, or until the cheese on top is melted and bubbly with a lovely golden hue.

Garnish and Serve: Once baked, take the dish out of the oven and let it cool for a few minutes to set. If desired, garnish with fresh basil leaves for a pop of color and added flavor. Serve warm and savor the delightful flavors of your cheesy stuffed shells!
