2 cups cooked rice (choose between white or brown)

1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup fresh or frozen broccoli florets

1 cup shredded sharp cheddar cheese

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth (low-sodium preferred)

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and black pepper, to taste

1 tablespoon olive oil

1/2 cup breadcrumbs (optional, for a crispy topping)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to prepare for baking.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts and cook for approximately 6-8 minutes, stirring occasionally, until the chicken is browned and no longer pink. Season the chicken with salt, pepper, thyme, and smoked paprika. Once cooked, remove from heat and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté for 3-5 minutes, or until the onion is soft and translucent. If using frozen broccoli, stir it in now to allow it to thaw and absorb the flavors of the onion and garlic.

        Combine the Ingredients: In a large mixing bowl, combine the cooked rice, sautéed chicken, cooked onion and garlic, cream of chicken soup, chicken broth, and half of the shredded cheddar cheese. Mix everything together until it is fully incorporated and evenly combined.
