Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

4 cups ripe tomatoes, chopped (canned whole tomatoes can be used if fresh tomatoes are not available)

2 cups vegetable broth

1 teaspoon sugar

1 teaspoon dried oregano

Salt and black pepper, to taste

1 cup fresh basil leaves, chopped (plus extra for garnish)

1/2 cup heavy cream (optional, for a creamier texture)

Croutons for topping (store-bought or homemade)

For Homemade Croutons:

4 slices of rustic bread, cubed

2 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 teaspoon dried Italian herbs

Salt, to taste

Instructions

Prepare the Croutons:

    - Preheat your oven to 400°F (200°C).

      - In a mixing bowl, combine the cubed bread with olive oil, garlic powder, Italian herbs, and a sprinkle of salt. Toss well to ensure the bread is coated evenly.

        - Spread the seasoned bread cubes out in a single layer on a baking sheet. Bake for 10-15 minutes, or until golden brown and crispy, tossing halfway through to ensure even browning. Once done, set aside.

          Make the Soup Base:

            - In a large soup pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until the onions become translucent.

              - Stir in the minced garlic and cook for an additional minute, allowing the garlic to become fragrant but not browned.

                Add Tomatoes and Seasoning:

                  - Pour in the chopped tomatoes (including their juices if you're using canned) along with the vegetable broth, sugar, dried oregano, and a generous pinch of salt and black pepper.

                    - Bring this mixture to a boil, then reduce the heat to a gentle simmer. Allow it to simmer uncovered for 20-25 minutes so the flavors can meld beautifully.

                      Blend the Soup:

                        - Remove the pot from heat. If you have an immersion blender, use it to blend the soup until smooth. Alternatively, you can ladle the soup into a countertop blender, blend until smooth, and then pour it back into the pot.

                          - If you prefer a richer flavor, stir in the heavy cream at this stage and gently reheat the soup.

                            Finish with Basil:

                              - Just before serving, stir in the chopped fresh basil, allowing the residual heat to wilt the basil leaves and infuse the soup with their fresh aroma.

                                Serve:

                                  - Ladle the soup into individual bowls. Top each serving with homemade croutons and a sprinkle of additional fresh basil for garnish.
