1 large egg, beaten

1 medium onion, diced

2 medium carrots, thinly sliced

2 celery stalks, diced

2 cups diced tomatoes (canned or fresh)

4 cups chicken or vegetable broth

1 cup green beans, trimmed and chopped into bite-sized pieces

1 cup fresh spinach or kale, roughly chopped

Fresh parsley, chopped, for garnishing

      Sear the Meatballs: In a large pot, heat the olive oil over medium heat. Once hot, add the meatballs in batches, ensuring not to overcrowd the pot. Sear them on all sides until they are beautifully golden brown. Once cooked, remove the meatballs from the pot and set them aside on a plate.

        Sauté the Vegetables: In the same pot, add the diced onion, sliced carrots, and diced celery. Sauté the vegetables for about 5-7 minutes, or until they become tender and fragrant.
