1.5 pounds baby potatoes, halved or quartered depending on their size

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 medium red onion, diced

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper to facilitate easy cleanup once the dish is ready.

    Prepare the Sausages: If you’re using whole sausages, slice them into thick chunks for better distribution and flavor; alternatively, you can keep sausage links intact if you prefer.

      Prepare the Vegetables: In a large mixing bowl, combine the halved baby potatoes, sliced red and green bell peppers, diced red onion, and minced garlic to create a colorful and flavorful base.

        Seasoning the Mixture: Drizzle the olive oil over the vegetable medley. Then, sprinkle in the smoked paprika, dried oregano, dried thyme, along with salt and pepper to taste. Toss everything together thoroughly until the vegetables are well coated with the oil and seasonings, ensuring each piece shines with flavor.

          Combine Ingredients: Gently fold the sausage pieces into the seasoned vegetable mixture, taking care to distribute the sausage evenly throughout the veggies.
