1 red bell pepper, thinly sliced

1 cup shredded carrots

4 green onions, finely chopped

1 tablespoon soy sauce

2 tablespoons honey

2 tablespoons fresh lime juice (approximately the juice of 1 lime)

1 teaspoon lime zest

1 head of Butter or Romaine lettuce, leaves separated and thoroughly washed

Salt and black pepper to taste

Optional toppings: crushed peanuts, freshly chopped cilantro, and lime wedges for serving

Instructions
 

Prepare the Shrimp: In a mixing bowl, combine the peeled and deveined shrimp with olive oil, minced garlic, grated ginger, and a pinch of salt and pepper. Toss the shrimp until they are well coated in the marinade. Let this mixture sit and marinate for about 15 minutes to develop the flavors.
