Simple Creamy Chicken Orzo

1 pound (450g) boneless, skinless chicken thighs, diced into bite-sized pieces

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (170g) orzo pasta

4 cups (1 liter) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) frozen peas

1 teaspoon dried thyme

1 teaspoon paprika

Salt and freshly ground black pepper, to taste

1/2 cup (50g) grated Parmesan cheese

Fresh parsley, chopped, for garnish

Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken thighs, generously season with salt and freshly ground black pepper, and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Once done, remove the chicken from the skillet and set aside.

    Cook Aromatics: In the same skillet, add the finely chopped onion. Sauté for about 3-4 minutes until the onion is translucent and softened. Then, add the minced garlic and cook for another minute, stirring until fragrant.

      Add Orzo and Broth: Stir in the orzo pasta, ensuring it’s well coated in the onion and garlic mixture. Pour in the chicken broth, making sure to scrape up any flavorful browned bits from the bottom of the pan. Bring the mixture to a gentle simmer.

        Simmer: Reduce the heat to low, cover the skillet with a lid, and let it simmer for about 10-12 minutes. Stir occasionally until the orzo is al dente and has absorbed most of the liquid.

          Incorporate Cream: Once the orzo is cooked, gently stir in the heavy cream. Follow with the frozen peas, dried thyme, and paprika, along with the sautéed chicken. Mix everything thoroughly and let it simmer for an additional 5 minutes until the dish is creamy and heated through.
