4 bone-in pork chops (approximately 1-inch thick)

2 large onions, thinly sliced

4 cloves garlic, minced

2 cups beef broth

1 cup low-sodium beef broth (or substitute with additional beef broth)

2 tablespoons Worcestershire sauce

1 tablespoon balsamic vinegar

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

½ teaspoon freshly ground black pepper

2 tablespoons olive oil

1 cup grated Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped, for garnish (optional)

Sear the Pork Chops: Heat the olive oil in a large skillet over medium-high heat. Season both sides of the pork chops generously with salt and black pepper. When the oil is shimmering, add the pork chops and sear them until golden brown, about 3-4 minutes per side. Once browned, remove the chops from the skillet and set them aside on a plate.

    Sauté the Onions: In the same skillet, add the sliced onions. Cook them over medium heat, stirring frequently for about 10-12 minutes, until they are caramelized and have turned a rich golden color. Once the onions are ready, add the minced garlic and sauté for an additional minute until fragrant. Remove the skillet from the heat.

      Prepare the Slow Cooker: In your slow cooker, combine the beef broth, Worcestershire sauce, balsamic vinegar, dried thyme, dried rosemary, and any remaining drippings from the skillet. Stir the mixture to combine all the flavors.

        Layer the Ingredients: Place the seared pork chops snugly on top of the liquid mixture in the slow cooker. Then, layer the caramelized onions along with any residual oil from the skillet over the pork chops for added flavor.

          Cook: Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork chops are tender and fully cooked through.
