Slow Cooker Fruit Chili

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes, including juices

1 can (8 oz) tomato sauce

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 medium red onion, chopped

2 cloves garlic, minced

1 cup diced peaches (fresh or canned, drained)

1 cup diced pineapple (fresh or canned, drained)

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust according to heat preference)

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro for garnish (optional)

Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped red onion and minced garlic. Sauté until the onion becomes translucent and fragrant, about 3-4 minutes.

    Mix Ingredients in the Slow Cooker: Transfer the sautéed onions and garlic into your slow cooker. Add in the black beans, kidney beans, diced tomatoes (with juices), tomato sauce, diced red and green bell peppers, diced peaches, diced pineapple, chili powder, ground cumin, smoked paprika, and cayenne pepper.
