1.5 lbs baby Yukon gold potatoes

4 cloves garlic, peeled and smashed

1/4 cup extra virgin olive oil

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon sea salt (or to taste)

1/2 teaspoon freshly ground black pepper

Zest of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

Boil the Potatoes: Fill a large pot with water, adding a generous pinch of salt to season. Bring the water to a rolling boil.
