Ingredients

1 box (12 oz) jumbo pasta shells

2 cups fresh spinach, finely chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (divided)

½ cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon ground black pepper

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions

Cook the Shells: In a large pot, bring salted water to a rolling boil. Once boiling, gently add the jumbo pasta shells. Cook according to the package directions until they reach an al dente texture. Drain the pasta and set aside, allowing them to cool slightly.

Prepare the Filling: While the pasta is cooling, take a large mixing bowl and combine the finely chopped spinach, ricotta cheese, half of the shredded mozzarella, grated Parmesan, egg, garlic powder, onion powder, salt, and pepper. Use a fork or spatula to mix everything together until well combined and creamy.

Stuff the Shells: Take each pasta shell and use a spoon to generously fill it with the spinach and cheese mixture. Place each stuffed shell seam-side up in a greased 9x13 inch baking dish, making sure they are arranged in a single layer.

Add Marinara Sauce: After all the shells are filled, carefully pour the marinara sauce evenly over the top of the stuffed shells. Then, sprinkle the remaining mozzarella cheese generously over the sauce to create a delicious cheesy topping.

Bake: Preheat your oven to 375°F (190°C). Once preheated, cover the baking dish with aluminum foil to prevent over-browning. Bake for 20 minutes. After this time, remove the foil and continue baking for an additional 10 minutes, or until the cheese is bubbly and has a lightly golden appearance.

Garnish and Serve: Once baked, carefully remove the dish from the oven and allow it to cool for a few minutes. Just before serving, garnish with fresh basil leaves for a pop of color and flavor. Enjoy your delightful and speedy spinach and cheese stuffed shells!
