Ingredients

For the Cake:

2 cups all-purpose flour

1½ teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

½ teaspoon salt

½ cup unsalted butter, softened to room temperature

1 cup firmly packed brown sugar

½ cup granulated sugar

3 large eggs

1 teaspoon pure vanilla extract

1 cup buttermilk

3 cups apples, peeled, cored, and diced (Granny Smith or Honeycrisp recommended for tartness)

1 cup chopped walnuts or pecans (optional for added crunch)

For the Topping:

¼ cup granulated sugar

1 teaspoon ground cinnamon

½ cup rolled oats

⅓ cup cold unsalted butter, cubed

Instructions

Preheat the Oven:

Begin by preheating your oven to 350°F (175°C). Prepare a 9x13-inch baking pan by greasing it with butter and lightly dusting it with flour to prevent sticking.

      Mix Dry Ingredients:

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt until well combined. Set this mixture aside for later use.

          Cream Butter and Sugars:

In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar. Beat this mixture on medium speed until it becomes light and fluffy, about 3-4 minutes.

              Incorporate Eggs and Vanilla:

One by one, add the eggs to the butter-sugar mixture, ensuring each egg is fully incorporated before adding the next. Mix in the pure vanilla extract until combined.

                  Add Buttermilk:

Gradually mix in half of the prepared dry ingredients. Once blended, add the buttermilk, followed by the remaining dry ingredients. Stir until just combined; do not overmix.

                      Fold in Apples and Nuts:

Using a spatula, gently fold in the diced apples, ensuring they are evenly distributed throughout the batter. If desired, add the chopped walnuts or pecans at this stage.

                          Prepare the Topping:

In a small bowl, combine the granulated sugar, ground cinnamon, and rolled oats. Using a fork or pastry cutter, work in the cold cubed butter until the mixture resembles coarse crumbs.

                              Assemble the Cake:

Pour the apple cake batter into the prepared baking pan, using a spatula to spread it evenly. Generously sprinkle the topping mixture over the surface of the batter, ensuring an even distribution.

                                  Bake:

Place the pan in the preheated oven and bake for 45-55 minutes, or until a toothpick inserted into the center of the cake comes out clean. Make sure to keep an eye on it towards the end to prevent over-baking.

                                      Cool and Serve:

Once baked, remove the cake from the oven and let it cool in the pan for at least 15 minutes. Slice into squares or rectangles and serve either warm or at room temperature. For an extra indulgence, top each piece with a scoop of vanilla ice cream or a dollop of whipped cream.

                                          Prep Time, Total Time, Servings:

Prep Time: 20 minutes | Total Time: 1 hour 10 minutes | Servings: 12 slices

Presentation Tip: For an inviting presentation, dust the cooled cake lightly with powdered sugar and garnish with thin apple slices or a sprinkle of cinnamon before serving.
