1 cup uncooked brown rice

1 can (15 oz) black beans, rinsed and drained

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup corn kernels (fresh or frozen)

1 can (14 oz) diced tomatoes, with juices

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper, to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro or parsley, for garnish

Olive oil, for sautéing and coating

Prepare the Rice: Rinse the brown rice thoroughly under cold water to remove excess starch. In a medium saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt. Once done, remove from heat and fluff the rice with a fork.
