1/2 teaspoon smoked paprika

For the Honey Mustard Dip:

1/4 cup mayonnaise

2 tablespoons Dijon mustard

2 tablespoons honey

1 teaspoon apple cider vinegar

Prep the Sweet Potatoes: Begin by peeling the sweet potatoes and cutting them into small chunks. Place the chunks into a pot of salted water and bring it to a boil. Cook for about 15-20 minutes, or until the sweet potatoes are fork-tender.

    Mash and Season: After draining the sweet potatoes, let them cool for a few minutes. In a large mixing bowl, mash the sweet potatoes until they are smooth and creamy.

      Combine Ingredients: To the bowl of mashed sweet potatoes, add the panko breadcrumbs, grated Parmesan cheese (if desired), egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Thoroughly mix the ingredients until they are well incorporated. The mixture should be cohesive enough to mold but not overly sticky.

        Form the Tater Tots: With clean hands, take portions of the sweet potato mixture and shape them into small cylinders, roughly 1 inch long. Arrange them on a lined baking sheet for easy handling.

          Fry or Bake:

            - For Frying: In a deep skillet, heat vegetable oil over medium heat. Carefully add the tater tots in batches, frying them until they are golden brown and crispy on all sides, which should take about 3-4 minutes. Transfer the fried tots to a plate lined with paper towels to absorb excess oil.
