1 cup brown rice

2 cups water or vegetable broth

1 can (5 oz) tuna, drained (preferably packed in olive oil)

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/4 cup fresh cilantro, chopped

2 tablespoons soy sauce or tamari

1 tablespoon sesame oil

1 tablespoon lime juice

Salt and pepper, to taste

Optional toppings: sesame seeds, chili flakes, or thinly sliced radishes

Cook the Brown Rice: Begin by rinsing the brown rice thoroughly under cold water to remove excess starch.
