2 cups fresh corn kernels (or 1 can of corn, drained)

1 can (15 oz) black beans, drained and rinsed

1 medium red bell pepper, diced into bite-sized pieces

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 ripe avocado, diced

¼ cup fresh cilantro leaves, roughly chopped

Juice of 2 limes (about ¼ cup)

3 tablespoons extra virgin olive oil

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and freshly ground black pepper, to taste

Prep the Ingredients: If using fresh corn, start by blanching the corn kernels. Bring a pot of water to a boil, then add the corn and cook for 3-4 minutes. Drain the corn and run it under cold water to stop the cooking process. If using canned corn, simply drain and rinse it under cold water.

    Mix the Base: In a large mixing bowl, combine the blanched or canned corn, black beans, diced red bell pepper, finely chopped red onion, halved cherry tomatoes, and diced avocado. Use a wooden spoon or spatula to carefully mix the ingredients together.

      Make the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, ground cumin, chili powder, and a pinch of salt and pepper. Whisk until the dressing is well blended and emulsified.
