2 ripe avocados

1 can (5 oz) of tuna, drained (olive oil-packed tuna is recommended for richer flavor)

1/4 cup plain Greek yogurt (or use mayonnaise for a creamier texture)

1 tablespoon Dijon mustard

1 tablespoon fresh lime juice

1/4 cup finely diced red bell pepper

1/4 cup finely diced cucumber

1/4 cup finely diced red onion

1 tablespoon capers, rinsed and roughly chopped

2 tablespoons chopped fresh cilantro (or parsley)

Salt and pepper, to taste

Lime wedges, for garnish

Prepare the Avocados: Slice each avocado in half lengthwise and carefully remove the pit. With a small spoon, gently scoop out 1-2 tablespoons of the flesh from each half to create more space for the tuna filling. Place the scooped avocado into a mixing bowl for later use.

    Make the Tuna Filling: In the same mixing bowl with the reserved avocado, add the drained tuna, Greek yogurt (or mayonnaise), Dijon mustard, and fresh lime juice. Then, mix in the diced red bell pepper, diced cucumber, diced red onion, chopped capers, and chopped cilantro. Season generously with salt and pepper according to your taste.
