2 medium zucchinis, sliced into half-moon shapes

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

1 bell pepper (any color), diced into small pieces

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional, for added heat)

Salt and pepper, to taste

2 tablespoons extra virgin olive oil

¼ cup low-sodium chicken broth

¼ cup freshly grated Parmesan cheese

Fresh basil leaves, for garnish

Prepare the Chicken: In a mixing bowl, season the bite-sized chicken pieces with smoked paprika, Italian seasoning, red pepper flakes (if using), salt, and pepper. Toss everything together until the chicken is evenly coated with the spices.

    Heat the Skillet: Place a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil is shimmering, carefully add the seasoned chicken pieces.
