Zucchini Lasagna Roll-Ups

Ingredients
  

3 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Fresh basil leaves, for garnish

Salt and pepper, to taste

Olive oil, for drizzling

Instructions
 

Preheat your oven to 375°F (190°C).

    Slice the zucchinis lengthwise into approximately 1/4-inch thick strips using a mandoline or a very sharp knife. Aim for about 12 slices in total.

      Arrange the zucchini slices in a single layer on a baking sheet lined with paper towels. Sprinkle each slice lightly with salt and allow them to sit for about 15 minutes to draw out excess moisture. After the time has elapsed, gently pat them dry with additional paper towels.

        In a mixing bowl, combine the ricotta cheese, 1/2 cup of the shredded mozzarella cheese, grated Parmesan cheese, egg, minced garlic, Italian seasoning, and red pepper flakes if using. Season the mixture with salt and pepper to your preference, and stir until well blended and smooth.

          Spread 1/2 cup of marinara sauce evenly across the bottom of a 9x13-inch baking dish.

            Take one zucchini slice and spread approximately 2 tablespoons of the ricotta mixture over it. Roll it up tightly from one end to the other, ensuring the filling stays inside, and place the roll seam-side down in the prepared baking dish. Repeat this process with the remaining zucchini slices and filling.

              Once all the roll-ups are arranged in the dish, pour the remaining marinara sauce over them, making sure every roll is generously covered. Then, sprinkle the remaining mozzarella cheese over the top of the dish.

                Drizzle a little olive oil over the entire dish to enhance the flavor as it bakes.

                  Cover the dish securely with aluminum foil and place it in the preheated oven. Bake for 25 minutes.

                    After 25 minutes, carefully remove the foil and continue baking for an additional 10-15 minutes, until the cheese is bubbly and golden brown on top.

                      Once finished, take the dish out of the oven and allow it to cool for about 5 minutes before serving. Garnish with fresh basil leaves for a vibrant presentation.
