2 medium zucchinis, finely grated

1 cup shredded cheese (cheddar or Monterey Jack recommended)

1/2 cup crumbled feta cheese

1/4 cup red onion, finely chopped

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

4 large flour tortillas

2 tablespoons olive oil, divided

Sour cream and salsa for serving (optional)

Prepare the Zucchini: Finely grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth, then gather the edges and squeeze out as much moisture as possible. This is a crucial step to ensure the quesadillas stay crispy and do not become soggy.

    Mix the Filling: In a mixing bowl, combine the drained zucchini, shredded cheese, crumbled feta, chopped red onion, cilantro (if using), garlic powder, cumin, salt, and pepper. Stir the mixture thoroughly until all ingredients are well combined and evenly coated with spices.

      Assemble the Quesadillas: On a clean working surface, lay one tortilla flat. Spoon a generous amount of the zucchini filling onto one half of the tortilla, spreading it out to avoid overfilling. Carefully fold the other half over the filling to form a half-moon shape. Press down gently around the edges to help seal the quesadilla.

        Cook the Quesadillas: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, carefully place one quesadilla in the skillet. Cook for approximately 3-4 minutes on one side, or until it is golden brown and crispy. Flip the quesadilla gently and cook for an additional 3-4 minutes on the other side.
