2 medium zucchinis, spiralized or thinly sliced

1 cup cherry tomatoes, halved

1 bell pepper (any color), diced

1 cup cucumber, diced

1/4 cup feta cheese, crumbled (optional)

For the Dressing:

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 clove garlic, minced

Prepare the Vegetables: Begin by preparing the zucchinis. Use a spiralizer to create spaghetti-like strands or thinly slice them into rounds. Once done, set them aside. Chop the cherry tomatoes in half, dice the bell pepper and cucumber, and thinly slice the red onion. Finally, chop the parsley. Ensure all vegetables are ready for assembly.

    Mix the Dressing: In a small mixing bowl, combine the olive oil, red wine vinegar, Dijon mustard, minced garlic, and lemon juice. If you desire a touch of sweetness, add the honey or maple syrup. Whisk everything together until the dressing is smooth and well combined. Season with salt and pepper to taste, then set aside.
